

What is natto?
Natto stems from China and is like the fermented bean and strange taste bean of China. It was recorded in ancient books that natto began to be prepared since the Qin Dynasty and Han Dynasty of China. Natto started from the lobster sauce of China.

According to Food Culture·New Market, both nattos are concerned with China. Especially, salty natto was introduced to Japan in the Nara period. In Japan, natto is also called "Chi", which has an edible history of more than 2000 years in Japan. It is the same with the lobster sauce taken by Chinese at present.
Since natto was introduced to Japan, it has been developed according to the natural conditions and social customs of Japan. For example, soy sauce paste is used in place of lobster sauce, or sauce is used in place of lobster sauce juice.

Since it was introduced by monks from China to Japanese temples, natto was first developed in temples. For example, Dalong temple natto, Dade temple natto, ikyu natto, binming natto of daifukuji temple, baqiao natto of Gosinji temple have been well-known special local products of these temples. Since lobster sauce is prepared in the kitchens of temples (called "Na Suo" in Chinese) and placed into jars or barrels for storage, Japanese call them "Tang natto" or "salty natto". Japanese regards it as nutritional food and flavoring, while Chinese uses it as flavoring after frying or steaming it.
In recent years, it has been shown by the studies by Japanese medical scientists and physiologists that the proteins of soybean are insoluble, while after soybean is prepared into natto, proteins become soluble and part of the proteins are decomposed into amino acids. The components of natto are as follows: water 61.8%, crude protein 19.26%, crude fat 8.17%, carbohydrate 6.09%, crude fiber 2.2%, ash content 1.86%. As a vegetable food, it has abundant crude protein and fat. Natto is a high protein nourishing food. The enzymes contained in natto can eliminate the cholesterol in vivo, decompose the acidified lipids, and recover the abnormal blood pressure to normal.
In recent years, people pay increased attention to the nutritional ingredients and medical treatment functions of natto, and a "natto hot wave" has formed in Japan. Even there is a slogan called "natto saves earth". In the United States and European countries, natto is called the "super nutritional food of the 21st century".

Natto is a special food with mucus on the surface prepared by fermenting boiled soybean with natto bacteria.
